I haven’t always been healthy. When I was 14, I was diagnosed with Ulcerative Colitis. For the next 12 years, I took prednisone and other prescription drugs on a daily basis to keep it in remission. But after 10 years of having UC, my doctor recommended a Total Colectomy (complete removal of my colon/large intestine) because of the severity of the disease. My surgeon told me that I would never be able to do any endurance sports (IE: run a marathon) because I would dehydrate too quickly without having my colon, learning that one of the main functions of the colon is to absorb water.
Fast forward to today. I’ve run over 35 marathons, completed 5 Ironmans, countless half Ironmans, half marathons, 10Ks, etc. and still compete today at over 50 years old. I’ve never taken any prescription drugs. Honestly, I couldn’t be healthier.
I stay busy. I mean, REALLY busy. I’m a holistic nutrition coach and business owner of Clean Eating Made Simple. I’m the CEO, recipe creator, meal planner, you name it. I’m also the founder of a dog rescue called Chica’s Rescue, where I find homes in the U.S. for the homeless dogs in Puerto Rico. Of course, I have dogs of my own too (plus 3 rescue cats)! Training for running races and triathlons keep me busy too! AND… I’m a homeowner so there’s always something to clean or fix.
Eating healthy is a must . . . but how does one find the time?? That’s where EatSimple28 comes in.
